Today I feel even worse than yesterday! Yikes. I had to cancel my hair appointment (praying for a quick cancellation from someone else, as I’m on a waiting list!) and I’m afraid we may not even make it to Classical Conversations tomorrow, which is truly disappointing. The one bright spot . . . I’ve put a ham in the crock pot so we won’t be looking at each other miserably around 5 pm saying "What’s for dinner?" I thought I’d share the recipe here, which I’ve created by putting several online recipes together. It smells good already!
1 ham of whatever size and type that suits your family 😉
2 cps apple juice
1 cp orange juice
1 cp maple syrup
1 1/2 cp brown sugar
1 1/2 cp raisins
1 tbs cinnamon
2 tsp ground cloves
2 tsp ginger
2 tsp nutmeg
1 tsp vanilla
Place ham in slow cooker. Pour in apple and orange juices, then maple syrup. Pack brown sugar on top of the ham (some will fall in; don’t worry about it!) Add raisins and spices to liquid, and cook for 8 hrs on low or 4-6 hrs on high.
We’re all looking forward to this simple-but-fancy dinner! I’ve got some steamable bags of veggies in the freezer, and I think I’ll roast potatoes too. Now, back to bed for me!
