Happy Sunday! I thought I’d share this wonderful favorite recipe with you, since it’s part of what’s for breakfast at our house.
Chocolate Chip Banana Bread
1 egg, 1 cup sugar, 3 mashed bananas, 1/3 cup oil *I like to use applesauce!*
1 1/2 cups flour (whole wheat is great!), 1 tsp. soda, 1/2 tsp. salt, 1 tsp. vanilla
1 cup chocolate chips, 1 cup chopped nuts (you can leave this out, of course!)
Combine all ingredients, pour into a loaf pan, and bake at 350 degrees for an hour. Let the deliciousness commence!
This is fabulous with tea in the afternoons, or with cheesy eggs for breakfast as we’ll have this morning! You can re-heat it in the microwave, *and* you can even get it all combined and poured into your pan the night before so it’s ready to be put in the oven when you wake up in the morning. Your family will think you’re a genius. Bon appetit!
