Recipe: Chocolate Chip Banana Bread

I too often field the hourly question we all fear: “What are we eating for _________???”  There are always cheers throughout the house when I announce, “Banana bread!”  The woman who was one of my very first mom mentors always gave chocolate chip banana bread as Christmas gifts.  I loved it then, make it often now, and have never met a combination of chocolate and banana that I didn’t like.  This is a yummy recipe I’ve had for almost 15 years now; I’ve tweaked it here and there (it’s not a fussy recipe, so you can do that!) and I thought I’d share it with you.  Chocolate Chip Banana Bread

1 egg, 1 cup sugar, 3 mashed bananas, 1/3 cup oil *I like to use applesauce!*

1 1/2 cups flour (whole wheat is great!), 1 tsp. soda, 1/2 tsp. salt, 1 tsp. vanilla

1 cup chocolate chips, 1 cup chopped nuts

Combine all ingredients, pour in a loaf pan, and bake at 350 for about an hour.

That’s it!

Serve with hot tea for a great teatime snack, or even for breakfast or lunch. I’m so glad my kids are home with me enjoying the wonderful scent of this treat as it bakes!
